History

At that time chocolate was a bitter drink for special occasions, named xocolli meaning "bitter water". Chocolate was made by cacao seeds grinding, then cooking and was often flavored with vanilla, chilli pepper and annatto to achieve a full and rich taste. At the beginning chocolate was used for ceremonial purposes. It was treated as a “Food of the Gods” and accessible only to special people. The further history tells us that chocolate was reserved for a long time only to high class. Cacao was always very, very expensive and cacao beans were often used as currency. Chocolate spread across Europe gradually. It was the fashionable choice of Kings and Queens, but in 20th century became popular and affordable for everyone.

Cacao Tree

Three main varieties of cacao beans used in chocolate are criolio, forastero and trinitario. “Criolio”, originates from Central America, is the best, rarest and most expensive one. The most commonly grown beans are “forastero” and “trinitario”. Forastero is very similar to criolio from Africa and trinitario is a natural hybrid of Criollo and Forastero. Theobroma cacao tree takes three to five years to mature and inside each pocha are 20-60 seeds embedded in a white pulp and every one is comprised of up to 50% cocoa butter fat.
